I moved to Seattle in July after spending almost 6 years in Massachusetts. The word that comes to mind when thinking about Seattle is "fresh". People are so organic here. The typical person is going to a farmer's market early on Saturday morning, or running/biking/skateboarding to their destination with a bike or skateboard they probably made themselves, or people are planting their own food they'll eat for the winter months just like in olden days. I won't or perhaps can't be as "fresh" as a true Seattleite but one thing I will do is cook more. The food here is amazing because good restaurants boast a hearty use of local, organically grown foods, but cooking at home usually on rainy days is going to be good for my soul.
So I start with a frittata.

I used actual spinach from the produce section instead of ones that come in bags. Grape tomatos because they're so cute! and cubed ham - I should have bought a block of ham and then cubed it but I'm a single person and there were bags of ham already cubed for me! Score! I also wanted to get basil but these muffin tins are small.
I used 14 eggs... AHHH so much!! but that's how much it took to fill these tins! Then I topped them off with Tillamook cheddar cheese mmmm (they were already shredded for me too!)
They started rising like crazy in the oven...
But after a while they cooled down.
These were dense since I used 14 eggs. I think I should have not filled them up to the brim and used less eggs next time. But they were delicious!
